Coleslaw ingredients
- 6 cups green cabbage, shredded
- 2 cups red cabbage, shredded
- 1 cup carrots, shredded
- Peanuts (optional)
- 1 green onion, chopped (optional)
Dressing ingredients
- ½ cup plain Greek yogurt
- ¼ cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon garlic clove, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Mix the ingredients for the dressing together in a small bowl.
- Place the shredded cabbages and carrots in a large bowl.
- Pour the dressing over the slaw mix and toss to combine.
- Serve immediately, or cover and refrigerate for up to 4 hours.
