Mouth-friendly recipe: dark chocolate ginger loaf

Ingredients
For the loaf
- 2 eggs
- ¼ cup coconut sugar
- ½ cup unsweetened applesauce
- 1 cup pumpkin puree
- 2 tablespoons molasses
- 2 tablespoons extra virgin olive oil
- 2 cups whole wheat flour
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ginger
- 1 teaspoon cinnamon
- ¼ teaspoon cloves
- ½ teaspoon allspice
- 4 tablespoons dark chocolate chips
For the chocolate-and-nuts glaze
- 4 oz dark chocolate chips
- ½ teaspoon cinnamon
- ½ cup coconut milk
- Mixed nuts, for topping
Instructions
- Preheat oven to 350 F. Prepare a 9x5 baking pan with parchment paper.
- Combine eggs, coconut sugar, applesauce, pumpkin, molasses, and olive oil and blend until smooth.
- Sift together dry ingredients in a large bowl and then fold into the batter. Add 2 tablespoons of dark chocolate chips.
- Transfer batter to prepared baking pan and smooth into an even layer. Sprinkle the remaining 2 tablespoons of chocolate chips on top, pressing them slightly into the batter.
- Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 30 minutes. Remove loaf from pan and let sit an additional 60 minutes.
- Meanwhile, melt the chocolate chips, cinnamon, and coconut milk together. Drizzle over cooled cake and gently press mixed nuts into the chocolate drizzle.
